Tandouhua in Chenthen their best noodles is not dandan noodles, but tender tofu (douhua) noodles. Noodles need to be thick to be chewy, but the sause will be relativity thin (surface-volumn ratio). If the noodle is thick, then the sauce must be thick for better coating. But how to do that? Tandouhua gave a brilliant unique answer: by adding tender tofu into the noodles and mix them together. The coating was then 120% solved, and the noodles also gained the tenderness and the scent from tofu❤

日本のラーメンを食べにきてくれてありがとう。ちなみにラーメンは日本の食べ物の中で1番種類が多くあると言っても過言ではない。地域によって使う素材も作りかたも味も歴史も何もかも違う。日本全国のラーメン旅をしても多分回りきれない。美味い店が無限にあるからね。そしてこの店はあの伝説の師から受け継いでる味だとかわかると面白いよ。

日本人です。麺料理はかなり食べてきたつもりでしたが、こんなに幅広いビャンビャン麺は初めて知りました。見てるだけで食べてみたくなりますね!
今回は紹介されていませんでしたが、中国の刀削麺も本当におすすめです。独特のちぢれとモチモチした食感が面白く、スープもしっかり絡みます。ビャンビャン麺とはまた違いますが、どこか共通するワイルドで癖になる魅力があります。
そして日本に来る機会があれば、ぜひ二郎系ラーメンも試してみてください。量の多さばかり話題になりますが、実は麺そのものが素晴らしいんです。普通のラーメンより太くて歯ごたえがあり、小麦の香りも力強い。個人的にはその麺の魅力にハマってしまい、もう何年も食べ続けています。
正直、今回は日本のつけ麺が優勝すると思っていたのでかなり悔しいです!

Japchae actually did not contain noodles. it was a dish exclusively for the king, made by stir-frying specialty vegetables from various regions of Korea (and add some meats). During the Japanese colonial period, as it was no longer a royal meal, noodles were added to make it affordable and larger enough for everyone to eat, resulting in the Japchae we know today.
To be honest, as a Korean, if I were to recommend a noodle dish unique to Korea, I would recommend 'Naengmyeon' and 'Kongguksu'.
