I don't think ''influential'' is the right word, because IZ*One didn't change anything in the industry. Even their concept isn't often replicated, with early Ive being the closest to it. However, their legacy is absolutely unavoidable and will be for a long time. And you barely even touched on the other contestants of PD48, as so many of them aso went on to debut, extending and reinforcing that legacy!

I was there. I remember when IZ*ONE had to disband the community lost their minds. IZ*ONE was far more successful than they were designed to be and I feel that company greed led to each looking at what hot idol they had and how to use them instead of renegotiating a new contract. There was a big online push and petition from fans begging the companies to all agree to keep going, but it never happened. Contrast that with I.O.I. Everyone was upset about it as they also were pretty big, but the world wasn't ending. But IZ*ONE was different.
But yeah, I agree that what we got out of IZ*ONE ending was amazing. Yena, Chaeyeon, and Eunbi are great soloists and I definitely follow LE SSERAFIM and IVE far more than I did IZ*ONE. It's sad that not everyone was able to reach IVE's level of success, but I do think their existing fanbase has given everyone chances and has opened doors.
Had they been able to end normally (like regular temporary groups), maybe we wouldn't have gotten what we have now? Who knows? All I'm thinking is will anyone care as much when Kep1er goes, or EL7Z-Up down the line? It'll be sad but… it's just a temporary group. I don't know why we all collectively forgot that IZ*ONE was supposed to be just like them. They transcended the formula.
I've heard the Korean military was a big reason for Iz*One's success. An ex Korean military Youtuber explained that Produce 48 aired at the perfect time for soldiers to be able to tune in and apparently every active Korean soldier was watching.
as a WIZ*ONE myself, i automatically become a RUBI, HYEMDAN, JIGUMI, GLASSY, FEARNOT, DIVE and binge watching drama/movie by Hyewon, Yena, Minju, Yuri and will be looking forward to Leader Eunbi soon to be debut Japanese movie this fall, and also some Japanese drama + variety shows of Nako & Hitomi
